Sud Forno Milanese Meal (March 2021)

We are back this week with a new box from Sud Forno's Executive Chef Giovanna Alonzi! This week Giovanna takes us up north to Lombardia for a traditional meal from Milano. Featuring dishes such as Cotoletta and Risotto alla Milanese, this week's meal is rich and hearty and showcases the rustic flavours of Milanese cuisine.

Like always we'll have fresh Sud Forno bread made by our Head Baker Luca Rotatori and we'll end the meal off with a classic southern Italian pastry called zeppole. A choux pastry filled with pastry cream, chantilly cream and amarena cherries, zeppole are a culinary symbol for Father's Day in Italy which falls on Friday, March 19th.

Included in the box:

Pane Pugliese: mother yeast (white flour and water), semola rimacinata from Altamura, salt

Risotto alla Milanese: riso acquerello, veal stock, butter, grana padano, veal marrow, salt, pepper, saffron

Cotoletta alla Milanese: veal cutlet, bread crumbs, eggs, salt, lemon

Insalatina Mista: spring mix, romaine lettuce, cherry tomatoes, cucumbers, carrots, celery, radishes, EVOO, balsamic vinegar dressing

Zeppole di San Giuseppe: choux pastry (flour, eggs, butter, water, salt), pastry cream (flour, butter, milk, sugar, vanilla bean, egg yolks, corn starch), amarene cherries, sunflower oil


Risotto Alla Milanese: In a small pot bring about 1L of hot water to a boil and reduce heat. Add the bone marrow in their vacuum bag and simmer. In another small pot bring the veal stock to a boil and simmer. In a small saucepan melt the shallot butter in the olive oil. Add the rice and toast in the pan for 2-3 minutes, tossing it around with a wooden spoon. Add a ladle of hot broth to the rice, stirring often and continue to add the broth as it gets absorbed a bit at a time for 16-18 minutes. Remove from heat, add the butter and grana, stirring until creamy. Divide into two plates, finish each with a bone marrow and serve hot!

Cotoletta alla Milanese: This cutlet is traditionally pan fried in clarified butter and the result is a rich decadent cutlet. If you’d like a lighter result, use a cooking oil such as sunflower. In a large pan heat your fat of choice (you’ll need about 300gr) until it just starts to bubble. Fry the cutlet for 4 minutes on each side until golden. Extract from the heat and dab on paper towels. Season with salt and serve with a fresh squeeze of lemon.

Insalatina Mista: Toss the salad in a bowl with its dressing and serve.

2017 'Blina' Barbera d'Asti DOCG, Agostino Pavia & Figli, Piemonte:
Ruby red with an intense bouquet of black cherry and juniper. On the palate the wine is classic Barbera: red berry flavours with a refreshing acidity. This is well-structured and smooth, low yields and old vines provide depth and concentration.

2018 'Rocche del Santo' Barbera d'Alba Superiore DOC, Brandini, Piemonte: Deep ruby red with notes of red fruit, baking spice and licorice. Concentrated palate with characteristic acidity, exceptional structure and elegance.


2019 'Trebium' Trebbiano Spoletino DOC, Antonelli, Umbria: Straw yellow with a citrus and floral nose, notes of almond and hawthorn blossom, and a slightly spicy finish. On the palate it is structured and persistent with a full acidity typical of the varietal.

2017 Herzù Riesling Langhe DOC, Ettore Germano: Straw yellow with tropical fruit fragrances and hints of herbs and minerals typical of the variety. Fresh and persistent.

We now deliver our meal boxes with Trexity! Enter your postal code when you checkout to see if you are eligible for local delivery (20km radius from Spaccio at 22 Sackville Street). Deliveries arrive between 12pm-8pm. For questions about your delivery, please contact Spaccio directly at (416) 368-4248. You will receive same day delivery if you order before 3pm. Orders placed after 3pm will arrive next day. Deliveries with Trexity can be tracked from the moment your order is being prepared up until you receive your order. 

Store Pickup

Store pickup for this item is available at Sud Forno Queen (716 Queen St. W.) or at Spaccio (22 Sackville St.) on Friday the 19th Saturday the 20th or Sunday the 21st (Spaccio only). Choose your pickup date and time on the checkout page.
