We are back this week with a new box from Sud Forno's Executive Chef Giovanna Alonzi! This week Giovanna has decided to make a combo of Tortellini in Brodo and Spezzatino (Italian beef stew) with potatoes. We'll start things off with a Terroni Verde salad and a Salumi board that just might have you missing Terroni's appetizers. Like always we'll have fresh Sud Forno bread made by our head baker Luca and we'll end the meal off with a decadent dessert from our pastry chef Armando Palmieri.
Included in the box:
Pane Pugliese: mother yeast (white flour and water), semola rimacinata from Altamura, salt
Salumiere: prosciutto di Parma, salame dolce, spianata Calabrese, olives, taralli
Terroni Verde Salad: mixed greens, cherry tomatoes, balsamic, extra virgin olive oil dressing
Tortellini in Brodo: Pasta: 00 flour, eggs / Filling: pork loin, mortadella, prosciutto, parmigiano Reggiano, salt, pepper, nutmeg / Broth: chicken, beef, carrot, onion, celery, parmigiano Reggiano rind, bay leaf
Spezzatino e Patate: boneless beef ribs, onion, celery, carrots, red wine, tomato sauce, potatoes, rosemary, bay leaf, salt, pepper
Crostatina al Cioccolato: flour, cocoa powder, eggs, icing sugar, dark chocolate, milk chocolate, glucose syrup, 35% cream, milk, chocolate pearls, butter, orange zest, salt
2018 La Prevostura 'Garsun' Piemonte Rosso: The colour is mid ruby and just beginning to show some orange on the rim. Spice and red fruit nose with depth. Supple, elegant and just medium bodied with firm but not overpowering tannins. Only 4455 bottles produced of this vintage.
2017 Planeta Mamertino: Intense ruby colour with notes of spicy dark fruits, woodspice, and evergreen. Tannins are refined and well integrated with the oak. This is an elegant red; an age-old blend beloved by Julius Caesar.
Terroni Verde Salad: Place salad in a mixing bowl, drizzle with dressing and toss. Plate salad in a ceramic bowl and serve.
Salumiere: Ready to serve.
Tortellini in Brodo: Bring broth to a boil. Set aside 2 cups for serving and keep warm. Boil the tortellini for 3-5 minutes. Drain tortellini from broth and divide them into two separate ceramic bowls. Pour 1 cup of broth in each plate and serve.
Spezzatino e Patate: Bring a large pot of water to a boil then lower heat to produce a gentle boil. Immerse the sealed bag of spezzatino in the hot water bath for 20 minutes. Prepare a serving plate and serve. Please exercise extreme caution as contents will be VERY HOT.
Crostatina al Cioccolato: Ready to serve.
