The Terroni sausage is a family recipe that is used in many of the dishes at the restaurant. Terroni buys the pork shoulder from a supplier and everything else is done in-house. Cosimo's Mom Mamma Rita still to this day makes sausage twice a week for all the restaurants! Some of our iconic dishes made with sausage are Garganelli Geppetto, Smendozzata Pizza and Tonnarelli alla Norcina.
