With sustainability always top of mind, we have been focused on reducing our food waste. Enter Cucina di Recupero - the art of using left over ingredients to create beautiful new dishes. We often speak about how proud we are of our tomatoes and our bread and, as you can imagine, we use a lot of both. To help curb waste, our chefs have created Pappa al Pomodoro - a Tuscan-style tomato and bread soup. This thick soup can be served both hot and cold or used as an accompaniment for eggs, grilled fish or burrata.
