Da Geppetto Monthly Meal (March 2021)
Welcome to Da Geppetto's monthly meal box! Our Sud Forno Temperance Chef Costantino Guzzo has created a very special box for you to enjoy on weekends during the month of March. Costantino is from Sicily, Italy and likes to bring in Sicilian traditions and cooking methods to his cuisine. This month he has curated a box that highlights the flavours of Le Due Grandi Isole Italiane, Sicilia e Sardegna (The Two Large Italian Islands, Sicily and Sardinia). The box includes local dishes of these regions such as the Sicilian Caponata, Fregola con Vongole from Sardegna and more! Seafood is a large part of the everyday diet when living on an island and this is exactly what you will be enjoying from Sud Forno Temperance's box this month!
You can choose to have this multi-course meal on its own or pair it with some of our delicious wines from Cavinona that our Sommelier Andrea Tonicello has paired with the flavours you will be experiencing.
*ONE BOX SERVES 2 PEOPLE*
Included in the box:
Caponata: Eggplant, green olives, capers, celery, tomato sauce, red wine vinegar, sugar
Polpo alla Catalana: Octopus, potato, red onion, celery, red peppers, capers, olives, parsley, lemon juice, olive oil
Fregola con Vongole: Fregola pasta, clams, tomato paste, garlic, onion, chili peppers, parsley
Calamaro con Cous Cosus: Squid, capers, sun dried tomatoes, cous cous, parsley, tomato sauce
Sfince Palermitane: Flour 00, butter, ricotta cream, sugar, pistachio, candied orange
Caponata: ready to eat, just place outside fridge two hours prior to serving
Polpo alla Catalana: place outside the fridge one hour prior to serving. Remove octopus from packaging, add dressing, mix all other ingredients (potato, red onion, celery, red peppers, olives, parsley) and serve.
Fregola con Vongole: bring a large pot of water to a boil then reduce heat to a simmer. Immerse both sealed bags containing clams and pasta in the hot water bath for 15 minutes. Remove all bags from the hot water bath, and mix both content well in a separate container. Prepare two serving plates and serve everything by dividing portions equally amongst these plates.
Calamaro con cous cous: bring a large pot of water to a boil then reduce heat to a simmer. Immerse the sealed bag containing calamaro in the hot water bath for 20 minutes. Remove the bag from the hot water bath. Prepare two serving plates and serve everything by dividing portions equally amongst these plates.

2019 Etna Bianco DOC, Graci, Sicilia: Pale yellow in colour, the nose reminds one of Sicilian fruit groves and their zesty lemons, in particular the unique cedro fruit
2018 'Belsito' Vittoria DOC, Terre di Giurfo, Sicilia: Medium bodied with finely integrated tannins. Drink it slightly chilled to highlight all of its refreshing qualities.
2017 Etna Rosso DOC, Graci, Sicilia: A finely meshed red, with round and creamy tannins woven with a subtle streak of smoky mineral.
2016 Faro DOC, Bonavita, Sicilia: Aromatic with vibrant red fruit, Mediterranean herbs and earthy complexity. Integrated tannins and a distinct minerality are balanced with the nocera's acidity.
Store pick-up for this item is available at Sud Forno Temperance (132 Yonge St.) from Thursdays-Saturdays anytime between 11:30am-8pm.
