IL GUSTO DEL VINO: LA SICILIA DEL RISORGIMENTO

Sicilian cuisine, like that of most of Italy, has been widely and justly celebrated as La Cucina Povera, a rustic cuisine born of necessity and ingenuity in times of hardship. But under Bourbon rule during the Kingdom of the Two Sicilies, another cuisine was beginning to assert itself in the kitchens of the nobles and aristocrats: La Cucina del Monsù. Inspired by the French court, these sumptuous, elegant, and highly elaborate dishes made their way to Sicily via the French chefs – the “Monsieurs” - present in the kitchen of every noble family during the era. The cuisine would later become a symbol of the decadence of the age as Bourbon rule gave way to Italian unification, but its influence today remains.

For this special historical edition of Il Gusto del Vino, La Bettola’s own beloved Sicilian, Executive Chef Costantino Guzzo, will showcase the enduring influence of French gastronomy on Sicilian cuisine. Resident Sommelier Andreina Da Riva and Terroni Wine Director Andrea Tonicello, meanwhile, will ensure that your palate is never tired with a selection of southern wines designed to stand up to these elegant dishes.
