Sud Forno Osteria Meal (April 2021)

We are back this week with a new box from Sud Forno's Executive Chef Giovanna Alonzi! This week Giovanna is keeping it simple with dishes you might find at an osteria in Italy. The term osteria means: “public room, a place where drinks — but mainly wine — are served accompanied by simple meals.” The word is derived from Latin, meaning foreigner, traveller to host. Osteria's go back to ancient Rome where they originated as refreshment spots for travellers passing through. Often plain and bare, they started as places to meet and to be restored. In the mid-1800s, with the beginning of foreign tourism in Italy, the term osteria took on the meaning of a pleasant place where common people could drink inexpensive, but good wine and eat tasty local foods — all for a good price — and often in a charming setting.

Like always we'll have fresh Sud Forno bread made by our Head Baker Luca Rotatori and we'll end the meal off with a crostata di Nutella e crema from our Executive Pastry Chef Armando Palmieri.

Included in the box:

Pane Pugliese: mother yeast (white flour and water), semola rimacinata from Altamura, salt

Tonnarelli Cacio e Pepe: spaghetti alla chitarra (eggs, semolina, water), cacio e pepe (pecorino, parmigiano, black pepper, water, butter)

Salsiccia e Patate: Terroni sausage (pork shoulder, chili peppers, paprika, salt, pepper, casing) patate e shishito (shishito peppers, red onion, evoo, salt, pepper)

Fagiolini: green beans, cherry tomatoes, evoo, garlic, chili pepper, salt & pepper, ricotta salata (sheep milk), basil

Crostata di Nutella e Crema: frolla al cacao (flour, butter, cocoa, eggs, sugar, salt, baking powder), Nutella, pastry cream (milk, cream, flour, starch, vanilla, yolk, sugar)


Tonnarelli Cacio e Pepe: Bring 4L of salted water to a boil. Add the tonnarelli and cook for 4 minutes. In the meantime place the “cacio e pepe” sauce in a pan and a ½ cup of the pasta water, stirring until creamy. Drain the tonnarelli from the cooking water and toss them in the pan with the cacio e pepe sauce for 2-3 minutes longer over medium-low heat.

Salsiccia e Patate: Preheat oven to 450F. Bake for 12-15 minutes, until potatoes become crisp.

Fagiolini: Heat a pan over medium heat for 1 minute. Empty the green beans container in the pan and toss around for 3-4 minutes over medium heat. Serve finishing everything with a generous sprinkle of ricotta salata.

2019 'Gialla' Gavi DOCG, La Mesma: Straw-yellow with notes of stone fruit on the nose following through to citrus and meadow flowers on the palate. Fresh, crisp and harmonious with vibrant acidity.


2018 Antonelli Montefalco Rosso DOC, Antonelli San Marco: Ruby red in colour, olfactory impact is intense and fruity with hints of cherry and wild berries. On the palate it is dry, balanced and well structured. The freshness provided by the Sangiovese makes this a wine that can be consumed immediately, and will continue to age in the bottle for several years.

2018 Langhe Nebbiolo DOC, Cascina Morassino: The Langhe Nebbiolo from Piemonte is an ethereal and elegant wine with scents of rose and tobacco, dark berries, dried red flowers, and toasted fennel. It is a balanced dry, medium bodied wine with a "brick"- hued garnet colour. The palate features fine tannins, an overall solid frame and clean flavours of sour cherry and strawberry with a long finish. An excellent example of Nebbiolo from the Langhe region.

Local Delivery

We now deliver our meal boxes with Trexity! Enter your postal code when you checkout to see if you are eligible for local delivery (20km radius from Spaccio at 22 Sackville Street). Deliveries arrive between 12pm-8pm, but usually on the earlier side. For questions about your delivery, please contact Spaccio directly at (416) 368-4248. You will receive same day delivery if you order before 3pm. Orders placed after 3pm will arrive next day. Deliveries with Trexity can be tracked from the moment your order is being prepared up until you receive your order. 

Store Pickup

Store pickup for this item is available at Sud Forno Queen (716 Queen St. W.) or at Spaccio (22 Sackville St.) on Friday the 16th, Saturday the 17th or Sunday the 18th (Spaccio only). Choose your pickup date and time on the checkout page.
