We are back this week with a new box from Sud Forno's Executive Chef Giovanna Alonzi! This week Giovanna teamed up with Terroni's Executive Chef Daniel Mezzolo to bring you flavours of the spring with speciality ingredients that we import from Italy directly to our central kitchen, Spaccio. 

Like always we'll have fresh Sud Forno bread made by our Head Baker Luca Rotatori and we'll end the meal off with our Al Volo panna cotta from our Executive Pastry Chef Armando Palmieri.

Choose the multi-course meal on its own or pair it with a selection of wines from our wine agency Cavinona!

 

Menu

*ONE BOX SERVES 2 PEOPLE*  

Included in the box:

Pane Pugliese: mother yeast (white flour and water), semola rimacinata from Altamura, salt

Insalatina: Boston Lettuce, radicchio, radishes, parmigiano dressing (EVOO, yogurt, parsley, grana, salt, lemon juice, yolk, mustard, sunflower oil, salt, black pepper)

Risotto Agli Asparagi: Acquerello rice, butter, shallot, asparagus, grana, gorgonzola, chicken stock

Pollo Arrosto: Ontario chicken brine (water, salt, dark brown sugar, bay leaf, fennel seeds, star anise, clove) marinate (vinegar, salt, shallot, olive oil, red chili pepper, red peppers, tomato paste, lemon, garlic, black pepper)

Carotine: heirloom carrots, EVOO, salt, pepper

Panna Cotta: 35% cream, sugar, vanilla bean, gelatin sheets (raspberries, sugar)

Instructions:

Insalatina: Remove the salad from its container by lifting it out from the bottom. Place on a serving plate layered as is. Shake the dressings well and drizzle over the salad.

Risotto Agli Asparagi: Bring the broth to a boil. Add the rice and cook for 12 minutes. Add the asparagus, stir and turn off the heat. Add the butter, grana and 1 tbsp. of gorgonzola, mix and wait 3 minutes. Serve finishing each plate with a bit more gorgonzola.

Pollo Arrosto: Preheat oven to 350F. Heat chicken for 20 minutes. 

Carotine: Remove the plastic bag from the carrots and heat in the oven for 8-10 minutes.

Panna Cotta: Ready to serve.

2019 'Fiorile' Albana di Romagna Secco DOCG, Fondo San Giuseppe, Emilia-Romagna: Amber yellow with a broad to the nose of citrus fruits, apricot and mineral hints that come from the muddy limestone soil. Full bodied with a tactile tannic element; a sincere and elegant expression of Albana di Romagna.

This vintage was awarded the prestigious Quattro Viti Four Vines from the Guida Vitae 2021.

Red

2017 'Campo Novo' Cesanese del Piglio DOCG, Casale della Ioria, Lazio: The estate grows the oldest clones of the variety; a true local red. Deep ruby with notes of black cherry, dark earth and spice. Medium body and dry balanced with a fresh fruit palate. Easily matched to any kind of cuisine. Cesanese is Lazio's only red DOCG varietal.

2018 'Bagolari' Teroldego Rotaliano DOC, Marco Donati, Trentino-Alto Adige: Ruby red with beautiful notes of violets and wild berries. Dry and sapid with almond on the palate, nice grip and full texture from the prince of Trentino wines.

Local Delivery

We now deliver our meal boxes with Trexity! Enter your postal code when you checkout to see if you are eligible for local delivery (20km radius from Spaccio at 22 Sackville Street). Deliveries arrive between 12pm-8pm, but usually on the earlier side. For questions about your delivery, please contact Spaccio directly at (416) 368-4248. You will receive same day delivery if you order before 3pm. Orders placed after 3pm will arrive next day. Deliveries with Trexity can be tracked from the moment your order is being prepared up until you receive your order. 

Store Pickup

Store pickup for this item is available at Sud Forno Queen (716 Queen St. W.) or at Spaccio (22 Sackville St.) on Friday the 9th, Saturday the 10th or Sunday the 11th (Spaccio only). Choose your pickup date and time on the checkout page.
