Truffle Season

Dubbed the ‘diamond of the culinary world’ for their value both in terms of money and flavour, truffles have always been popular with both diners and chefs.

The most valuable of these are white truffles from Alba, Italy which have a slight garlicky, earthy flavour similar to shallots, with a deep musky aroma.

The truffles we serve at Terroni, most notably topping our Tonnarelli alla Norcina, are black truffles from Molise, Italy. Black truffles grow underground in wooded areas, especially amongst the Oak and Hornbeam trees in the WWF regional reserve Guardiaregia. Black truffles have a rich, earthy and nutty taste, perfect for the cool weather.
