Acquarello Rice is an organic medium-grain rice native to the Novara and Vercelli regions of northern Italy better know as Carnaroli rice. The rice grown using a crop rotation system in paddy fields irrigated by pure water from the nearby Alps. The grains of rice are aged from one to three years in temperature controlled silos. Carnaroli rice is traditionally used for making risotto.
