Pale red in colour. Aromas of of violet, green pepper and raspberry. The strong minerality on the palate blends wonderfully with the freshness given by the calcareous, stony and marly soil. Long-lasting, full-bodied and structured, but enjoyable and not overwhelming on the palate, owing to the silky and soft tannins that bring out the wine’s elegance.

Vinification/Ageing: Spontaneous fermentation is made in concrete vats, without any yeast addiction or temperature control. Following a very long skin maceration for minimum 25 days with daily dumplings hand made. Also the malolactic fermentations takes place without any addition of bacteria or other type of starters. The ageing is almost for 16 months in big of french and slavonian oak. Then finish for 1 months more in concrete again, where decant naturally before bottling by gravity without any filtration or clarification during the waning moon.
