Our Pane Pugliese is the bread served in our Terroni restaurants. This is our white sourdough bread influenced by the style of bread from Altamura, Italy and made using a blend of white flour and semola rimacinta (refined semolina) resulting in a lower amount of gluten. Pane Pugliese has a golden brown, crunchy crust and is soft and moist on the inside structured with holes and airiness due to the presence of mother yeast.
