A ripe apple aroma mingles with zest of lime and a touch of rosemary. Passobianco wafts up from the glass, soft and round, with a lovely blend of white pit fruits and subtle nuances of mint. It finishes completely fresh, with crisp mineral tension and hints of sour citrus.

Vinification/Ageing: Passobianco is a single-varietal Chardonnay, produced with incredibly intensive handwork. During the harvest season, several harvest rounds are carried out within two weeks to ensure only the grapes are at their perfect ripeness. Fermentation takes place at 23°C in steel tanks for a full 20 days. Aging then takes place for 18 months in cement and large oak barrels, with the wine being moved every two months, alternating between concrete and large oak barrels. Medium golden yellow.
