Vinification/Ageing: Vinification: Cold maceration on the skins for about 24 hours,
then soft pressing of the grapes and natural clarification of the must by cold static decanting. Alcoholic fermentation at controlled temperature in stainless steel vats.
Fine lees for 15 months, partly in stainless still vats, partly in 10 hl oak barrels and partly in barriques.
