It is a typically Salento variety of Rapa, it is part of the story of our identity, it is cultivated starting from October and harvested in different phases from December to March. Once the turnips have been harvested, they are cleaned manually with a small knife to remove the hardest parts, blanched and finely ground with extra virgin olive oil.
