Vinification/Ageing: Cerasuolo was first produced in 1997 using "svacata," a process used by local farmers in ancient times to add the red wine. Our reinterpretation involves a dynamic interpretation of the blend between the white and red wines, which is done midway through their fermentation.
One year in stainless steel and then another year in bottle. This wine's nature demands the drinker's cooperation; it can be perceived as rosé or red, depending on the mood of the moment.
