Vinification/Ageing: Hand-harvested Nebbiolo grapes are fermented with indigenous yeasts. Maceration is gentle and carefully managed to extract elegance rather than power. 60% of the wine is aged in large neutral oak (botti) and the remaining 40% in cement, to respect varietal purity and terroir expression, without masking the wine’s natural freshness and aromatic precision.
